Ingredients:
1 Tbsp. of olive oil
1 onion (diced)
2 garlic cloves (diced)
1 carrot (grated)
2 green pepper (chopped)
1 spicy green pepper (chopped)
2 tsp of parsley (chopped)
1 tomato (diced)
1/2 tsp of turmeric
1tsp of Himalayan vegetable seasoning
A dash of paprika
A dash of ground clove
A handful of whole wheat spaghetti
1/2 avocado (smashed)
Preparation and method:
Add oil onto pan using medium heat. Sauté onion, garlic then add peppers, tomato, and all spices. Mix and cover for 15 minutes. Taste and mix (adjust seasoning as needed). Add chopped parsley and cover for 5 more minutes.
In a small pot, add water, salt and a drop of oil, and bring to a boil. Add spaghetti and boil for 10-15 minutes. Drain water, use a bowl to put spaghetti and mix it with smashed avocado. Serve warm.
