Ingredients:
1 tsp of olive oil
1 carrot (grated)
1 tomato (diced)
1 green pepper (diced)
1 cup of quinoa
1/2 avocado
1 tsp of Himalayan vegetable seasoning
2 cups of water
Preparation:
Wash and dice pepper and tomato
Wash and grate carrot
Method:
Add oil onto small pot (medium heat)
Add carrot, pepper, and tomato, seasoning
Mix for 1-2 minutes then add quinoa and mix
Add water and boil until water evaporates
Reduce heat to low and cover for 10 minutes
Fluff with fork and Serve warm with avocado.
