Ingredients:
A stack of celery leaves
3 leeks
2 broccoli head
1 onion
4 garlic cloves
3 Tbsp. of Olive Oil
2 large potatoes
3 cups of water
2 Tbsp. of Himalayan Spice
1 tsp of ground clove
Preparation:
Thoroughly rinse celery leaves under running water then chop into small pieces
Rinse and chop leeks
Peel and finely chop garlic and onion
Wash potatoes and chop into small/medium pieces
Rinse and roughly chop broccoli
Method:
Warm up a large pot on medium heat
Add oil, onion, garlic, leeks, ground cloves, Himalayan Spice, and mix thoroughly
Add chopped potatoes
Mix and cover for 3 – 5 minutes
Add chopped celery leaves, vegetable broth, mix
Add water
Mix and taste (add more spices, seasoning if necessary or preferred)
Cover and bring to a boil for 1 hr. 30 min
Serve warm and enjoy!
