Ingredients:
4 scallions
3 onions
6 garlic cloves
3 carrots
a handful of asparagus
3 green pepper
3 tomatoes
½ of a fresh coconut
3 radishes
1 eggplant
1 zucchini
8 large potatoes
6 small potatoes
Half a cup of olive oil
Himalayan vegetable spice/seasoning (any preferred seasonings)
Black pepper
2 tsp of Paprika
Salt & pepper
2 tsp of turmeric
Preparation:
1. Wash all vegetables
2. cut into small pieces or dice: scallions, onion, garlic, carrot, asparagus, green pepper, & tomatoes
3. use a grater to grate the fresh coconut
4. cut in slices radish, eggplant, zucchini, & potato
Method:
5. Heat-up a large pot on medium heat
6. Add oil to pot and warm up for about 1 minute, then add all #2 ^ and #3 ^
7. stir and mix well
8. add turmeric, Himalayan seasoning, black pepper, paprika
9. mix and cover for 15 minutes on medium heat
10. pre-heat oven at 200C/375F
11. add 1 tsp of olive oil to bakeware and spread throughout
12. mix 1 slice each from #4 ^
13. once finished, sprinkle salt & pepper, then add your prepared ingredients from #9^ spread throughout
14. add soya granules over layer and spread (optional or add anything you want)
15. add 2nd layer of potato, eggplant, zucchini, radish
16. add the rest from #9^
17. cover with aluminum foil and put in oven for 30 minutes
