Ingredients:
1 zucchini
5 beetroots
4 carrots ?
Handful of asparagus
½ kg of spinach
3 radishes
8 garlic cloves
1 green spicy pepper ?
2 scallions
2 cup of whole grain ? wheat ? flour
4 pieces of fresh coconut ? (grated)
1 onion
A handful of parsley
4 tablespoons of Himalayan vegetable seasoning (any preferred seasonings)
1 tsp of black pepper
2 tsp of turmeric
½ cup of pumpkin oil
Preparation:
Wash and chop all vegetables: beetroots, carrots, radish, zucchini, pepper, scallions, asparagus, and spinach
Peel and chop garlic
Method:
1. Heat-up a large pot on medium – low heat
2. Add oil to pot and warm up for about 1 minute
3. Add all chopped vegetables to pot: carrots, beetroots, onion, zucchini, radish, garlic, scallions, asparagus, parsley
4. Mix well then add 3 tsp of Himalayan Vegetables Seasoning (any seasonings), black pepper, & turmeric
5. Mix well for 1 minute then add grated coconut
6. Add 2 cups of water
7. Steam for 15 minutes
8. Add spinach and another cup of water
9. Cover and bring to boil for 30 minutes (check after 15 minutes to mix all ingredients in Pot)
How to make this specific Dumpling
1. Add flour to a large bowl
2. In a separate bowl, add 1 cup of water, 1 tsp of Himalayan seasoning, 1 tsp of oil and mix
3. Add the mix water to Flour
4. Mix the dough
5. Take small piece to make desired shape
6. Add dumplings to veggies soup
7. Add the rest of the water to pot (if not just add an additional cup of water)
8. Taste to make sure you’re satisfied with seasoning (add more seasoning if preferred or if needed)
9. Cover and let it cook on low- medium heat for 30 -45 minutes
