Ingredients:
1 onion
1 red bell pepper
3 Tbsp. of Himalayan vegetable spice
1 Tbsp. of turmeric
1 spicy green pepper
½ tsp of ground cloves
½ tsp of cloves
4 cups of vegetable broth
2 large potatoes
1 celery root
A handful of celery leaves
½ kg of string beans
6 large cabbage leave
1/3 kg of spinach
A handful of parsley
1/3 cup of olive oil
1 Tbsp. of pumpkin oil
Preparation:
Peel and chop onion
Wash and chop peppers
Wash and chop potatoes (preferably with skin on)
Rinse cabbage under running water then chop
Rinse spinach thoroughly then chop
Wash string beans and snip/cut of ends
Rinse parsley then chop
Peel and finely chop celery root
Rinse celery leaves then finely chop
Method:
Warm up a large pot on high heat
Add oils, chopped onions, peppers, then mix and cover for 2 – 3 minutes
Add Himalayan spice, turmeric, cloves, parsley, then mix
Add chopped potatoes, celery root and mix
Add string beans, vegetable broth, and cover for 3 minutes
Add 2 cups of water
Taste (add more spice/seasoning if necessary)
Cover and bring to a boil for 45 minutes
Add chopped celery leave, cabbage, and spinach
Mix and cover for 30 minutes
Uncover, mix, then taste
Reduce heat to low for 15 minutes
Serve warm and enjoy!
