Ingredients:
1 cup of water (or water from boiled beetroot leaves)
A handful of beetroot leaves
2 tsp of Olive oil
1 Scallion
2 garlic cloves
1tsp salt
A cup of Millet Grain
Preparation:
1) Wash and cut beetroot leaves
Rinse and chop scallion
Peel and chop garlic
2) put in pan and add water
3) boil for 15 minutes uncovered
4) warm up skillet on medium heat, add olive oil, cooked beetroot leaves, salt & pepper, chopped garlic, scallions
5) mix
6) add one cup of Millet Grain
7) add water (preferably the boiled water from beetroot leaves)
8) let it boil until the water dries
9) cover for about 20 minutes
Serve warm with avocado
