Ingredients:
4 cups of freshly chopped spinach
1 cup of parsley (chop)
3 garlic cloves (mince)
1 tbsp. of olive oil
2 tomatoes
1 tbsp. of paprika
1 cup of polenta
1 cup of homemade coconut milk
1 tbsp. of Himalayan vegetable spice
2 cups of water
1 avocado
Preparation:
Rinse parsley, spinach, and tomatoes under running water and finely chop into small pieces
Peel and mince garlic
Method:
Warm up medium pot on medium heat
Add oil, parsley, tomatoes, garlic, spice, coconut milk, and mix
Add chopped spinach and stir for 2 minutes
Add polenta, water, and stir for 2 minutes
Taste and add seasoning if necessary
Reduce heat to low
Mix and stir for 1 minute
Cover for 20 minutes. Stir for 2 minutes. Cover for another 5 ā 10 minutes
Serve warm with avocado
