Are you looking for something quick and healthy for lunch or dinner? well… look no further because this quick and simple vegan taco was done in fifteen minutes or less. It was delicious, healthy, and filling. I made it for lunch and decided to make it again for dinner that night. I drooled just thinking about the flavor.
While I have my Taco (check below for recipe), I think of how simple it is to eat healthy. A few weeks back, I talked about the Basic of Healthy Eating, meal planning and prepping. I know there are people out there struggling to eat healthy and stay healthy because they do not have access to any farmers market in their neighborhood. Nowadays, we have communities with nothing but fast food restaurants, deli corners, and liquors. We need people to start eating healthy. We need people to stuffing themselves with poisons and start living the life they deserve. I’m sick and tired of seeing my loved ones and friends in terrible shape. I’m tired of hearing their same excuses.
I want everyone out there to know that it is possible to change your live around. It is possible to start taking care of your healthy, your mental health, your physical health. This Simple Vegan Taco recipe is for one person. Adjust your ingredients if you’re making lunch for more people.
Ingredients:
3 Spinach tortillas
1 eggplant
1 – 2 tomato (I used a 1 tbsp of Ajvar – a Macedonian specialty I brought back with me from Macedonia)
4 chopped baby onions
A handful of chopped parsley
2 cups of chopped Kale
Salt & Chili peppers
Vegan mayo
Avocado (optional)
Preparation:
Warm up skillet. Add 2 tbsp of olive oil, chopped baby onions, and chopped parsley. Mix and cover for 1 – 2 minutes, then add chopped tomato and cover for another 2 minutes. And voila!
Warn up another skillet then add 2 tbsp of olive oil. Add sliced eggplants, chili pepper powder, then sprinkle salt to taste. Fly sides, add olive over eggplants then use a spatula to break eggplant to piece as it starts to become tender.
Spread vegan mayo over warm tortilla, then add chopped kale, mixed tomato sauce, and fried eggplant. Garnish with avocado (optional).
