I love a quick and easy lunch. This spinach bulgur took 25 minutes to create and it was delicious, simple, leaded with nutrients. I love spinach and I’ll add it to just about everything.
Ingredients:
½ kg of spinach (chopped)
1 horseradish (grated)
1 (hot) red pepper
1 tbsp. of Himalayan Spice
1 tbsp. of olive oil
Preparation:
Thoroughly rinse spinach under running water and chop
Wash, peel, and grate horseradish
Rinse and chop pepper
Method:
In a small pot on medium heat, add oil, grated horseradish, spices, and spinach
Mix and cover for 5 minutes
Add 1/3 cup of water and cover for 10 minutes
Reduce heat to low then add 1/3 cup of bulgur, mix and cover for 15 minutes.
Mix and taste (add more spice if necessary)
Serve or cover for another 5 minutes if necessary
