I love the spinach bulgur. So easy to make and super healthy. Lunch or dinner, it’s my go to quick and easy meal when I have a busy day. I always feel so full and satisfied.
Ingredients:
½ kg of spinach
½ beet (grated)
½ carrot (grated)
½ cup of bulgur
1 tbsp. of smoked paprika
1 tbsp. of Himalayan vegetable spice
1 tbsp. of olive oil
½ avocado
Preparation:
Thoroughly rinse spinach under running water and chop into small pieces
Wash, peel, and grate half of beet and carrot
Method:
Warm a small pot on medium heat.
Add oil, beet, carrot, paprika, Himalayan spice, mix, taste and cover for 15 – 20 minutes
Add chopped spinach, ½ cup of water, bulgur
Reduce heat to low, cover and let cook until water evaporates
Fluff and serve with avocado
