Ingredients:
4 cups of freshly chopped spinach
3 garlic cloves (mince)
1 tbsp. of olive oil
1 tbsp. of paprika
1 cup of polenta
2 red bell peppers
1 onion
1 tbsp. of Himalayan vegetable spice
3 cups of water
Preparation:
Rinse spinach and bell peppers under running water and finely chop into small pieces
Peel and mince garlic and onion
Method:
Warm up medium pot on medium heat
Add oil, onion, peppers, garlic, spices, and mix
Add chopped spinach and stir for 2 minutes
Add polenta, water, and stir for 2 minutes
Taste and add seasoning if necessary
Reduce heat to low
Mix and stir for 1 minute
Cover for 20 minutes. Stir for 2 minutes. Cover for another 5 ā 10 minutes
Serve warm and enjoy!
