Ingredient:
1 Eggplant
1 Summer Squash
1 Bell Green Pepper
1 Cucumber
1 Tomato
1 Tbsp. of olive oil
Salt (to sprinkle over vegetables)
Preparation:
wash and slice all vegetables.
Method:
Warm up a pan on medium heat
Add oil, summer squash, pepper, eggplants, and sprinkle salt.
Simmer for about 2 minutes
Reduce heat to low then cover for 20 -25 minutes.
Serve with cucumber and tomato.
