This couscous salad is so tasty, healthy, simple, and delicious. I made this delicious, filling couscous meal for lunch and it was done just under 30 minutes.
I love it so much, I decided to include it in a meal plan I’m working on for a close friend of mine. My friend wants something quick, easy, and simple. Something that can be cooked or eaten in under 30 minutes and still taste amazing, delightful, loaded with nutrients. So, this is the perfect meal to add to the plan for them. It’s amazing how food can make someone so darn happy. If you are a couscous and zucchini lover like myself, then I would definitely recommend you try this couscous salad.

Ingredients:
2 Tbsp of olive oil
2 zucchini (chopped)
4 garlic cloves (diced)
A handful of chopped scallions
A handful of chopped parsley
1 cup of couscous
A hint of salt
1 tbsp of chili powder
Preparation:
Wash and zucchini into fine pieces. Rinse scallions and parsley and chop into fine pieces.
Method:
Add oil to small pot and sautee garlic until golden. Then add scallions, parsley, chopped zucchini and salt and pepper. Mix and cover for about 2 minutes.
Add 1 cup of water and couscous to pot and add a hint of salt and oil. Reduce heat to low until dry and fluff with a fork. Add couscous to sautéed veggies and mix.
