Okay, okay! I promise I’ll do one post for you guys ? soon on how to spice it up in the bedroom. However, this post is on to HOW TO SPICE UP YOUR MEAL AND EAT HEALTHIER. Hope you try to enjoy the recipes.
EGGPLANT AVOCADO SANDWICH FOR BREAKFAST
1 avocado
4 slices of whole wheat bread
1 eggplant
Olive oil
Salt and pepper to taste
Pea shoots microgreens
Garnish: garlic powder, cayenne pepper, red pepper flakes,
Vegan mayo
Sunflower seeds
Heat up pan then add 1tbsp and spread throughout.
Wash, peel, slice eggplant, and place in pan. You will now add oil over the eggplant. Don’t be alarm – the eggplant will suck up the oil. Fry until tender then flip and fry the other side. Once cooked, you spatula will go right through it. You can start to mash it using your spatula. Add salt, pepper, and cumin to taste.
Spread vegan mayo over bread. If you’re a fan of toasted bread, please do so before spreading mayo over bread. Add fried eggplants, avocado, and your microgreens. Sprinkle garlic powder, cayenne pepper, and red pepper flakes over sandwich. And lastly, topped with sunflower seeds. Et voilá! Bon appetit!
INDIAN PUNJAB EGGPLANT WITH RICE & AVOCADO FOR LUNCH
Roasted eggplant simmered in hearty tomato sauce. This package is vegan, gluten-free, and non-gmo. I found it while trolling down the aisle at Coop Hungry Hollow, my go to community’s farmers market for everything.
I warmed up the sauce in a pan, added it over rice and garnished with avocado. That’s all!
A WHOLE WATERMELON FOR SNACK/DINNER
I feasted on a whole watermelon for dinner. It’s a medium watermelon so I can eat it all in one sitting.
