Ingredients:
1 Mango
2 cups of Fresh Coconut Milk
4 Apricots
A handful of walnuts
A handful of oat crunch
2 tbsp. of Chia Seeds
1 tsp of Sunflower Seeds
2 tbsp. of pumpkin seeds
1 tsp of Flaxseed
A drop of Vanilla Extract (optional)
Method:
Preparation: use half of a mature coconut and chop into small pieces. Put in blender and add 2 cups of warm water and blend (power blend, if preferred). Strain the milk using a strainer or a cheese cloth. Put the milk in the fridge for at least 1 hour before making smoothie. (If you prefer or want flavor in your milk, add a drop of vanilla extract while blending)
Rinse blender, wash, peel and chop mango into small pieces and put in blender. Same with apricot wash and chop. Add your homemade coconut milk, blend all ingredient until smooth. Serve in a bowl or in a glass with walnuts, chia seeds, flaxseed, sunflower seeds, oat crunch, pumpkin seeds, or anything you like as toppings. Enjoy!
