What I ate for breakfast and lunch instead of having my usual smoothie or oatmeal for breakfast. I decided to change things up a bit in this b****.
I went to the market yesterday and bought fruits and vegetables for the next two weeks. Among those, I bought 20 avocados at 0.88 cents each. I’m hoping they don’t all ripped at the same time. However, if that does happen, guess what? We’ll be a fiesta of Guacamole for breakfast, lunch, and dinner. Other items purchased including Jack-fruit for $1.48 per lbs and mine was 27 lbs.
I also got watermelon, vegan yogurt, almond milk, whole wheat bread, strawberries, blueberries, and some more leafy greens. Maybe I will do a post on food shopping with y’all soon to show you what, where, and how I purchase my food.
Here are the recipes for what I had for breakfast and lunch this morning.
AVOCADO TOAST FOR BREAKFAST
Two slices of whole wheat bread
1 avocado
Vegan mayo (spoon full link)
Pea shoots microgreens
Chili powder
I’m not a fan of toasted bread because I don’t like the crunchy sound in my mouth sometimes. If you preferred to toast your bread, please do so first. Spread vegan mayo across bread, add sliced avocado. Garnish your avocado toast with pea shoots microgreens and chili powder.
KALE, BROCCOLI AVOCADO SALAD FOR LUNCH
A handful of kale
2 cups of broccoli (fresh)
Spinach (a handful)
1 avocado
2 Garlic Cloves (minced)
Chili powder
1 tbsp of raw pumpkin seeds
Raw sunflower seeds (1 tbsp)
A handful of raw cashews
Sautéed garlic and broccoli in olive oil with salt and pepper. Use a large bowl to mix the sautéed broccoli, spinach, kale, sliced avocado, and chili powder. Garnish with raw pumpkin, cashews, and sunflower seeds.
