My first snow storm since I’ve been back in NY. I guess I’ll be staying indoor today. However, my blinds are wide open because I love seeing the wind and the snowflakes in perfect harmony. It’s a true beauty.
This morning, while I had my morning oat bowl, (below for recipe!) I reflected on the beauty of the wind and the snowflakes together and thinking what if we start to live together peacefully rather than fighting. what if everyone starts to stand up for animal rights and protection. What if everyone turns to a plant-based lifestyle, aware of their health, their nutrition, their body and understand how a plant-based lifestyle cannot only be beneficial to their health, but the environment, the animals, and the community.
Being a vegan and supporting your local farmers have a huge impact on your health, the animals, the environment, and bring the community much closer.
I am a big believer in local farming and I am more satisfied when I know where my food is coming from. I get to interact with the community and learn the purpose of certain fruits or vegetables. Why fruits and vegetables feed my soul and leave me all full and purposeful. I’ve learned so much this year when it came to food, growing and feeding my body, my soul, so I know 2018 will get better and bigger.
Ingredients:
Organic oats, pear, maple syrup (optional), chia seeds, pumpkin seeds, flaxseed, gojis, coconut flakes, water.
(I did not measure any of my ingredients this morning, I just added what I felt was right for me at that moment)
Preparation:
Cook organic oat flakes with water in a small pot on stovetop for about 3 – 5 minutes, stirring often until it becomes thick and bubbly. Remove from heat and mix with one finely chopped pear. Serve in a bowl with chia seeds, pumpkin seeds, gojis, flaxseed, and organic coconut chips. Enjoy!
