I found this sauteed cabbage, tomato, carrots, rice and avocado to the lightest, simplest, and quickest vegan dinner to make after a long and busy day. I got home, took out a small pot and cook some rice. As the rice was cooking, I sautéed the veggies and voila within 30 minutes I was enjoying my dinner.
Ingredients:
3 carrots (chopped)
A piece of cabbage (shredded)
1 large tomato
1 avocado
1 cup of wild rice
1 ½ cup of water
2 tablespoon of olive oil
Himalayan pink salt
Chili pepper
Preparation:
Wash and chop carrots
Wash and chop tomato
Rinse and shred cabbage
Method:
1. Add water, oil, salt, and parsley (for flavor) to a small pot on the stove and bring to a boil.
2. Bring rice to a boil until water evaporates.
3. Use a spoon or fork to fluff and cover for 5-10 minutes.
4. Remember everyone likes their rice a little different. You, therefore, need to pay attention to water and rice ratio. The more water you add, the pastier the rice.
5. Sautéed veggie: add oil to a medium pan on medium heat
6. Add tomato, stir, and cover for 2-3 minutes
7. Add carrots and cabbage and mix
8. Add chili pepper
9. Add salt to taste
10. Mix all ingredients and cover for 5-7 minutes
11. Serve sautéed veggies with rice and avocado. Enjoy!
