Beets for lunch, anyone? This is what I call a BeetGhetti!!! Haha, Get it? I surely crack myself up ?
I love beets. Love them in about ANYTHING. I’ve added beets to my smoothies, vegetables, rice, polentas. The list goes on. The earthy taste of beets is so refreshing and satisfying. They give me that instant drive I need when I feel low and tired. Plus, Beets are loaded with vitamin and nutrients. I’d eat it raw, cooked, steamed, or baked. I’d have it for breakfast, lunch, or dinner. However, the best beet explosion in my mouth is when I mix it with pasta. This simple Vegan Beet Pasta is made just under 30 minutes. It is quick and easy, delicious and healthy. At this moment, I can feel my Italian friends and former Italians colleagues squirming in their seats. Sorry guys! It’s all love. This beet pasta for lunch is exactly what I need after a hardcore workout.
Ingredients:
3 large beetroots (chopped)
4 sweet peppers (chopped)
Ajvar (A Macedonian delicacy)
2 garlic cloves (finely chopped)
2 tbsp. of olive oil
Chili peppers (2 tbsp.)
½ tbsp. of Himalayan Spice
A handful of whole wheat spaghetti
2 zucchinis (finely chopped)
Marinara Sauce
A handful of Parsley
3 – 4 scallions
Preparation:
Wash, peel, and chop beets
Wash and chop zucchini
Rinse parsley, scallion, peppers then chop
Peel and chop garlic
Method:
Add beets and water to a pot on medium heat
Bring to a boil
Add spaghetti, a tsp. of olive oil, a pinch of pink salt
Boil uncovered for 15 – 20 minutes until soften or until water evaporates
….
Warm up a large skillet on medium heat
Add oil garlic
Sautee garlic until golden
Add scallions, parsley, peppers, zucchini
Add chili pepper, salt, stir, and cover for 2 minutes
Reduce heat to low and cover for 5 – 10 minutes
Mix thoroughly and taste
Add 1 large spoon of ajvar then marinara sauce
Mix for about 1 minute or 2
Add pasta beets to skillet and mix thoroughly
Cover for 3 – 5 minutes
Garnish with Vegan Cheesey Parm
Serve warm and enjoy!
