All it takes is some planning and prepping. I made this vegan rainbow pesto pasta for dinner and oh my my… all the yumness and goodness.
It was the tastiest, quick and easy pesto pasta I’ve made in a while. Lately, I have been trying to limit my cooking time to under 45 minutes. This new strategy is pushing me to become more creative in my cooking and have time left for some quality time.
Ingredients:
Rainbow angel hair pasta
1 large onion
1 large tomato
2 tbsp of olive oil
Pesto
Himalayan pink salt
Ground Chili peppers
Raw cashews (grounded)
Preparation:
Wash and chop onion
Wash and chop tomato
Ground fresh, raw cashews
Method:
In a small pot on medium heat, add water, oil and salt then bring to boil
Add rainbow pasta
In a medium skillet: add oil
Add chopped onion and tomato
Add salt and chili pepper to taste
Mix and cover for 5 min
Add pesto then mix
Add pasta then mix
Garnish with raw grounded cashews and serve
PESTO: sautéed onion, tomato, store bought pesto, chili peppers, and salt
